Shakshuka

Olive oil, for sauteing
1 onion, diced
1 bell pepper, diced (for extra spice, use a jalapeno)
3 garlic cloves
1 tsp cumin
1 tsp paprika
1/8 tsp cayenne
1 (14oz) can diced tomatoes
Salt & black pepper, to taste
3-5 oz feta
3-6 eggs
Cilantro

1. Heat oil in a skillet over medium-low. Add diced onion and bell pepper. Saute until translucent. Add garlic and cook for a couple more minutes then stir in cumin, paprika, and cayenne. 


2. Pour in tomatoes and season with salt and pepper. Simmer until the tomatoes have thickened. Stir in crumbled feta.


3. Make a couple small holes in the tomato mixture and gently crack an egg into each one. Season eggs with salt/pepper. If you have a lid, place it over the skillet to help poach the eggs quicker and more uniformly. The eggs should no longer be translucent when set. Sprinkle with cilantro and serve with toast.
